These cookies are chewy & dense, yet crispy on the edges. The chopped dates provide a light sweetness. They are super wholesome and would make an excellent healthy snack! They can also be gluten-free if you need them to be. Ingredients: · 2 cups wholegrain oats* · 1 cup oat flour* · 1/2 cup desiccated coconut · 1 tsp baking powder* · 1 tsp cinnamon · 1 cup unsweetened applesauce · 1/2 tsp vanilla extract · 100g de-pitted dried dates (chopped) 1. Preheat oven to 200C fan bake. 2. Line a baking tray with parchment paper and set aside. 3. Put all ingredients in a large bowl and mix to combine. 4. Shape into 12 cookies using damp hands. 5. Place cookies onto the lined baking tray and into the middle rack of the oven. 6. Bake for approximately 15min or until golden brown. 7. Remove from the oven and place cookies on a wire rack to cool before eating. Notes *Use gluten-free oats, oat flour, and baking powder to make these gluten-free if you need to. The cookies are very lightly sweetened. If you have a sweet tooth you may wish to substitute some of the applesauce with an equal quantity of date paste. You can jazz these up by adding in dairy-free chocolate chips, cacao nibs, any dried fruits, or by drizzling melted chocolate over them once they've cooled. This recipe is flexible and reasonably difficult to stuff up, so feel free to switch it up!
